Job general objective: Responsible of continuous innovative preparations to maintain high level of showcase and quality of the cuisine. In addition to that he is responsible of operation progress in the kitchen and managing, supervising and following up the stock. He is also supervising training inside the kitchen with ability to perform his duties as required and as per the management’s directions.
Duties and responsibilities:
Educating different preparations as per the recipes, following up and discussing various development methods to improve the cuisine.
Fully understand the employees’ attitudes and tasks in order for him to bridge the gap during their absence or determining the suitable substitute to bridge the gap.
Setting the standards, supervising the performance and issuing various directions to his subordinates.
Full conversant about sound financial and commercial decisions as it is essential to have credibility, honour and ability of leadership.
Reviewing levels of the employees to ensure service that provided to the members as well as operational services and financial objectives.
Developing the menu, maintaining updated and precise costs of all prepared and sold dishes at the food and beverage department.
Developing the menu and maintaining the updates and full knowledge about cost of prepared and sold dishes at the food and beverage department.
Determining method of food presentation, the food, providing distinguished signature decorations and supervising quality of offered products in terms of method of presentation and the flavour.
Ensuring that the products had been prepared in a good looking and with quality standards that stipulated earlier, reviewing final products and method of presentation before sending the same to the quality department.
Knowledge about necessary and precise temperature rates of all food products.
Ensuring that all tools used in the kitchen have maintained and operate properly as per guidelines of the health department and the club’s policies.
Arranging with food and beverage department to obtain required goods and services and maintaining the level of quality in terms of preparation, storage, send and presentation of the food.
