الوصف الوظيفي Responsible for tempering all types of chocolate using several skills to create all types of moulded or hand shaped confections. Developing and costing new menu items regarding the use of chocolate Ensuring quality and supply of suitable chocolate and associated food stuffs required for chocolate work Keeping up to date with chocolate techniques and practice To be responsible for the presentation, cleanliness, and hygiene of the Kitchen and your own person at all times, ensuring hygiene procedures are followed and undertaking cleaning duties in line with the cleaning rota, and as directed by the Sous Chef To ensure food safety and hygiene at all times, following correct procedures for the cleansing and preparation of all food, dating and rotating all products correctly, and checking quality and freshness of food prior to use To ensure all storage areas, utensils and equipment are clean, tidy, and organized at all times. To implement adequate systems of stock and waste control as directed by the Sous Chef To monitor and record any wastage or breakages in line with company procedures Actively share ideas, opinions, and suggestions in daily shift briefings To ensure all kitchen colleagues are aware of standards and expectations To follow kitchen policies, procedures, and service standards To follow all safety and sanitization polices when handing food and beverage المهارات Previous experience in culinary field (chocolate) required Diploma/certification in a culinary discipline (chocolate) required Strong interpersonal and problem solving abilities Highly responsible and reliable Ability to work well under pressure in a fast paced and stressful environment Ability to work cohesively with fellow colleagues as part of a team Read and write and speak English fluently Polished and presentable Ability to plan, organize and implement Ability to work within a multi-unit, multi-concept operation Having extensive knowledge involving the history, flavor, texture and other properties of chocolate in order to properly create desserts, candies, sculptures and decorative pieces Basic knowledge of how to properly temper and mold all types of chocolates. Knowledge of how to decorate confections using all types of decorating materials (. spray gun, transfer sheets, writing skills on confections…etc) Knowledge of raw materials, production processes, quality control, costs, and other techniques for maximizing the effective manufacture and distribution of chocolate goods تفاصيل الوظيفة |
