JOB SUMMARY To prepare Menu items as assigned by Executive Chef and approved by management KEY DUTIES AND RESPONSIBILITIES includes but not limited to following: Food preparation: Set up the mis-en-place in stations for the various meal periods in accordance to performance standard. Prepares food items according to the standard recipes. Prepares checks and tastes the food before the service. Kitchen Operations and service standards: Ensures that all kitchen equipment are properly maintained and there is minimum damage while in use. Ensures that operating standards for the equipment are followed. Maintains high level of cleanness at all times in the kitchen. Stores food items properly in the fridge. Keeps food items and fridge tidy and clean at all time. Checks that the temperature is within the guidelines. Cleans and arranges the working area before leaving. Collects, checks quality and quantity of requisitions from the Commissary / kitchen as directed. Understands and adheres to the company’s policy relating to fire, hygiene and safety. always Displays courtesy and professionalism. Good knowledge in meats types Receive, inspect, and store meat upon delivery, to ensure meat quality. Record quantity of meat received and issued to cooks and/or keep records of meat sales Sharpen and adjust cutting equipment Receive, inspect, and store meat upon delivery Cut, or grind pieces of meat Weigh, wrap, and display cuts of meat Cut or prepare meats to specification or customer’s orders Store meats in refrigerators or freezers at the required temperature Keep inventory of meat sales and order meat supplies Clean equipment and work areas to maintain health and sanitation standards Stock handling: Minimizes wastage of all food items. Breakdown mis-en-places station at the end of meal periods and store the food away properly To assist in minimizing order and keeping the stock at a minimum level. People management: Familiarizes with all sections of the kitchen and ensures employees are flexible enough to cover all areas of the kitchen. Briefs the incoming shift. Maintain good working relationship with colleagues and all other departments.

Education and Experience Education: Bachelor’s degree (B. A.) in Hotel management; or equivalent combination of education. Experience: 2 – 3 years related experience and/or training Knowledge Base: Kitchen procedures; & Equipment Competency: Motivating Others Quality Orientation Customer Understanding Decision Making Creativity/Innovation Thoroughness Flexibility Resilience
