Ensures that bakery is prepared according to recipes in classical and culinary manner
Prepares the requisition for groceries and items based on par stock
Prepares time schedule of his section and submit to the Section Head Chef for approval
Knowledge of all standard procedures and policies pertaining to the bakery preparation, receiving, storage and sanitation
Coordinates daily tasks with the Bakery Head Chef
Full awareness of the menu items, their recipes, methods of production and presentation standards
Have excellent knowledge of baking temperature and creativity, whilst maintaining quality and controlling costs in a volume food business
Checks periodically expiry dates and proper storage of food items in the section
Guides and trains the subordinates on a daily basis to ensure high motivation
Daily feedback collection and reporting of issues as they arise
Checks the outlet daily reservations to determine the quantity of products to be prepared
Sees that all fridges, reach-ins and freezers are cleaned and in order at all times
Plans and supervises the par stocks and inventory of his stores and freezers
Checks that the portion sizes of bread and other selections are all similar and that there s a consistency in the production
