OVERVIEW
To ensure the smooth running of the food operation including the maintenance and cleaning of the fabric of the kitchen.
RESPONSIBILITIES & DUTIES
To ensure agreed food standards are maintained at all times.
To issue and monitor maintenance dockets, thereby ensuring that the kitchen fabric and equipment is kept in a safe, clean and in fully functional condition.
To monitor the quality of deliveries from suppliers and take appropriate action where necessary to ensure that we comply with HACCPS and H&S;procedures.
To ensure agreed quality of produce is monitored and appropriate action is taken when standards are not met and targets are not achieved.
To order foodstuffs as required and ensure that stock is rotated, labelled and stored in compliance with procedures laid out in the H&S;manual, so that food safety and quality is maintained.
To liaise with the floor staff and other departments as necessary to ensure guest satisfaction and smooth running of service.
To optimise profitability of the outlet and ensure that all relevant costs are controlled in line with the budget.
Ensure Health & Safety standards (equipment, premises, staff and uniforms).

QUALIFICATIONS & SKILLS
Proven experience as a head chef or similar executive role.
Experience in planning and budgeting.
Excellent communication, organizations and leadership skills.
Problem-solving aptitude.
