Direct all operations within scope of responsibility for the central kitchen to achieve its short, medium and long term business plans. To adhere to company H&S;policies and maintain general cleanliness of the Kitchen. To develop the skills of the team and help develop people.
Apply approved functional policies, processes and procedures and monitors adherence so that work is carried out in a controlled manner.
Manage the effective achievement of the company objectives through the leadership of the department – setting individual objectives, recruiting qualified staff, managing performance, developing and motivating staff, provision of formal and informal feedback and appraisal – in order to maximize subordinate and departmental performance.
Plans menus for all food outlets served by the central kitchens.
Schedules and coordinates the work of cooks and other kitchen employees to assure that food preparation is economical and technically correct and within budgeted labor cost goals.
Ensures that high standards of sanitation, cleanliness and safety are maintained throughout all kitchens at all times.
Establishes controls to minimize food, supply waste and theft.
Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principles.
Develops standard recipes and techniques for food preparation and presentation which help to assure consistently high quality and to minimize food costs; exercises portion control for all items served and assists in establishing menu selling prices.
Prepares necessary data for applicable parts of the budget; projects annual food, labor and other costs and monitors actual financial results; takes corrective action as necessary to help assure that financial goals are met.
Consults with the Catering Division about food production aspects of special banquets being planned.
Cooks or directly supervises the cooking of items that require skillful preparation.
Evaluates food products to assure that quality standards are consistently attained.
Evaluates products to assure that quality, price and related goods are consistently met.
Establishes and maintains a regular cleaning and maintenance schedule for all kitchen areas and equipment.
Provides training and professional development opportunities for all kitchen staff all around the company.
Drive and communicate all initiatives externally and internally to ensure on-time delivery of services as per service level agreements.
المهارات
Quality system, Hygiene / HAACP education with certification.
Experience working internationally is a must, work history in Saudi is a plus.
A 4 year degree in Culinary Arts or in any other related field from a recognized body.
Be able to communicate and understand the predominant language(s) of our guests.
Basic knowledge of dining room and service procedures and functions is must.
8-10 years kitchen experience, at least 5 of which in supervisory / management roles
Fluent in English
Arabic language is a plus
Be able to work in a standing position for up to 8 hours.
Be able to communicate effectively and in a timely manner.
Be able to safely lift and easily maneuver trays of food frequently weighing up to 30 to 35 pounds.
