The Quality Assurance Manager is responsible in his capacity as Contract Manager for the day to day operations. The Quality Manager will be responsible for the management, direction and coordination of all quality and regulatory activities across the projects. This includes providing the training and the quality support to ensure that the required production, quality and regulatory standards are achieved.
Apply approved functional policies, processes and procedures and monitors adherence so that work is carried out in a controlled manner.
Be updated on new safety trends in the industry and lead the training of his staff on HACCP and SafeServ Training to ensure all staff are trained to the required levels.
Ensure that all production on site meets with the required quality specifications.
Manage and develop the staff in the restaurants, central kitchen department through involvement, training, delegation, and regular reviews of performance.
Responsible for ensuring adherence to all external and appropriate regulatory requirements.
Drive key changes and continuous improvement in applicable systems and procedures.
Prepare and frequently update the QA manuals and provide hard and soft copies to the team members.
Maintain standards in all operation management, food handlers and kitchen premises from which food is sourced, stored, prepared or served, complies with the current food safety legislation.
Good hygiene and food safety practices and informed staff are vital in the preparation, storage, distribution and service of food.
Takes management level responsibility for food hygiene and food services with a clear line of accountability.
Make sure all food and ingredients used by suppliers, kitchen, and departments are sourced in accordance with known standard purchasing specification, is used by all suppliers, contractors & kitchen are from accredited suppliers.
Make sure all foods are stored in appropriate conditions and protected from contamination and deterioration, including protection against pests.
Make sure all foods, including raw materials, ingredients, intermediate products and finished products, are received and kept at temperatures, which comply with the Food Safety Regulations (HACCP & ISO).
Make sure food safety assessments are carried out with the aim of identifying the critical food safety steps within the business and taking appropriate control measures to reduce any associated risks.
Make sure all food handlers maintain a high standard of personal hygiene.
Have skills, knowledge and capable to give all food handlers supervision instruction and/or training in accordance with their levels of work activity and responsibility.
Responsible for continuously monitoring and reviewing the system to ensure it is working and proper communication and consultation at all levels.
Self Audit – to make sure that an appropriate and effective system of managing catering and food hygiene is in place and that the necessary level of controls and monitoring are being implemented.
Make sure the Food / Non food items are stored in the appropriate conditions for their type and kept clean and tidy to minimize ‘foreign body’ hazards. Chilled storage areas must be run at suitable temperatures to comply with temperature control regulations.
Make sure that the raw foods, which may cause contaminate should be kept away from ready to eat foods such as fruit and vegetables.
Be responsible to comply with Food Labeling Regulations, Storage procedures and Inspection of facilities.
Drive and communicate all initiatives externally and internally to ensure on-time delivery of services as per service level agreements.
Supervise the activities and work of subordinates by providing formal and informal feedback to ensure that all work within a specific area is carried out in an efficient manner and in accordance with set individual targets.
Comply with all relevant safety, health and environmental procedures to ensure a healthy and safe work environment and inform non-compliance to their immediate supervisor.
Perform other related duties or assignments as directed.
المهارات
Bachelor’s degree in quality assurance or equivalent major.
ISO or HACCP certified level 3 minimum.
Experience in the preparation of Technical Documentation.
Excellent knowledge of food safety, quality control & production processes.
10+ years post graduation experience in a Quality environment with at least 7+ years at a managerial level, within a Catering & Hospitality Industry and Hospital experience will be plus.
Fluent in English, Arabic language is a plus.
Excellent Numerical, Analytical and Problem-Solving Skills.
Be able to use & supervise use of a POS system.
Be able to use Microsoft Office for documents and spreadsheets.
Be able to communicate effectively and in a timely manner.
Ability to coach, train and motivate others.
