An upcoming five stars hotels coming soon in Jeddah, Saudi Arabia is pleased to announce the recruitment of Food Safety Manager according to the following requirements:
• Candidate must have experience minimum two years with five stars hotels.
• Hotel Pre-opening experience is preferable.
• Transference of sponsorship is a must.
• Candidate must be resident in Saudi Arabia.
• Priority is for Saudi citizens, expatriates who are married to Saudi citizens, Sons / Daughters of a Saudi citizen.
Role Introduction:
The incumbent is responsible to provide the operations with the means , methods and knowledge to serve all foods and beverages, throughout the operations by practicing safe food handling practices.
Metrics of Performance:
• HACCP Certification Audit.
• Annual HACCP Surveillance Audit.
• Quarterly Food Safety Internal Audit.
Primary Responsibilities:
• Forming HACCP team in each hotel, select HACCP team leader and build the food safety internal auditors team.
• Devise food safety internal audit check list and HACCP manual for each hotel.
• Update and upgrade HACCP manual based on standard of international & local governmental & corporate.
• Plan and organize with L&D;food safety training for different level of food handler.
• Assist with HACCP certification requirement & documentations for all new hotel projects.
• Issue a quarterly HACCP status feedback with road map for improvement to all hotels general managers.
• Liaise with authorized cleaning chemical supplier to insure adherence and proper use of all supplied chemicals and training.
• Conduct pre-agreed annual HACCP surveillance audit in all hotels.
• Devise hygiene goals that are in compliance with the F&B;purpose statement.
• To be present during project meetings and consult on HACCP compliance requirements.
• To insure proper budgeting for all HACCP and safe food handling trainings and materials.
• Be an integral part at the orientation program for new F&B;executives.
• Liaises with and through HOD to monitor employee daily check (temperatures, cleaning, storage and sanitation) and to decimate in the monthly HACCP teem report for each hotel.
• Develop internal inspection program (unannounced audit) that will be focused on the prevention of food safety issues.
• Assist GM’s during any alleged food borne illness outbreaks and / or any type of other claims associated with food.
• Interact with the internal and external food safety communities, building strong relationships with local departments of health and other groups relevant to food safety qualifications.
• Prepare plant measures and reports indicating results of the bacteriological and analytical tests per-formed.
• Planning and implementing trace ability testing and monitoring.
• Establish professional communications channels to work / coordinate with the Executive Chef, F&B;, Chief Engineer, L&D;, Chief Steward, HACCP Team Leader, HK, FC, HR and GM (within the property operation).
