Requirements:
Should have at least 10 years of experience in international cuisines, lebanese cuisine, and preferably pastries and sweets.
Strong experience in recipe development, portion size and food cost control.
Proven experience as head chef.
Ability of kitchen management.
Outstanding communication and leadership skills.
Up-to-date with culinary trends and optimized kitchen processes.
General Duties:
The head chef is expected to have strong communication, leadership and management skills; and can lead and organize a shift and handle all of the kitchen’s responsibilities during that shift.
The head chef is expected to work in a fast paced kitchen and consistently produce top quality dishes while delegating tasks to other cooks and assistants.
The head chef has to have an active and creative interest in food.
The head chef has to have the ability to work with numbers and to assist the store manager in the ordering of daily and weekly raw materials and supplies.
The head chef will be responsible for every plate that comes out of the kitchen; therefore he/she must train and develop existing as well as newly recruited cooks and supervise the assistants to ensure proper dish requirements.
Working with the restaurant manager, the head chef must also handle some paperwork (such as employee evaluation), and report to the restaurant manager and business owners on kitchen operations.
Inspire and motivate the team to achieve food to specification. Recognize good performance, and deal with poor performance through training or through the company’s disciplinary procedures.
