الوصف الوظيفي
Commis Chef is responsible to take care of the daily food preparation and duties assigned to meet the set standard and qualities. They are needed to assist Chef De partie. Functional Responsibilities:
Prepare ingredients for cooking, including portioning, chopping, and storing food.
Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist
Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
Portions food products prior to cooking according to standard portion sizes and recipe specifications.
Assumes 100% responsibility for quality of products served
Consistency and adherence to food production standards
Follow labelling method per product shelf life
Apply FIFO method daily per section assigned
Must adhere to standardized food labelling procedure and apply “clean as you go” system at all times.
Check and ensure the correctness of the temperature of appliances and food
Control food stock and food cost in his section
Ensure the highest standards and consistent quality in the daily preparation and keep up to date with the new products, recipes and preparation techniques
Coordinate with other sections for wastage and cost control
To have full knowledge of all menu items, daily features and promotions
Correct menu portioning

Minimum 2 years’ UAE/GCC experience in Arabic or International Cuisine from medium sized/established restaurants; not cafeteria.
Fluent English communication
HACCP
Flexible to work either in Dubai or Abu Dhabi
