Fully understands the Materials Department’s operations, including receiving, purchasing, issuing, storage, and requisitions. Based on receiving, requisitions, and sales, create a daily food cost for the outlets. Provides department heads with the expense statistics they need to run a profitable business. Maintain recipe costing and analysis with the F&B;Head. Collaborate with department heads to devise waste-reduction strategies - Implement the method and keep an eye on the loss analysis. Take or monitor inventories in all outlets across the property. Optimise the cost analysis. Ascertain that all IDTs are processed quickly and efficiently. Assist the Store Coordinator in ensuring correct accounting and merchandise requisition. Prepare various departmental reports and assist with month-end closing procedures. Monitor market trends and make cost-cutting recommendations for the hotel. Examine all budgets and expense predictions with a critical eye.
